  • 4 medium Peaches ripe, fresh for best flavor
  • 2 cups Strawberries fresh, can use frozen if needed
  • 1 cup Apple Juice homemade or 100% organic preferred
  • 2 cups Sparkling Water can substitute with tonic water
  • 2 cups Crushed Ice for chilling the drink

Method
 

Preparation Steps
  1. Preheat your oven to 175 °C (350 °F) to roast the fruits.
  2. Cut peaches in half and remove pits, then halve the strawberries.
  3. Arrange the halved fruits cut side up on a lined baking tray.
  4. Roast fruits for about 25 minutes until peaches are soft and caramelized.
  5. Let roasted peaches cool for about 10 minutes, then peel skins off.
  6. Blend the roasted peaches with apple juice until smooth to make peach puree.
  7. Blend the roasted strawberries until smooth to create strawberry puree.
  8. In individual glasses, divide strawberry puree and fill with crushed ice.
  9. Pour the peach puree over the ice, then top off each glass with sparkling water.
  10. Serve immediately, garnished with mint leaves or a slice of peach.
