  • 1 medium Shallot Substitute green onions for a similar taste.
  • 1/2 cup Parmesan Cheese Use pecorino for a delightful twist if unavailable.
For the Dressing
  • 2 tablespoons Lemon Juice Fresh is best, but bottled will do in a pinch.
  • 1 teaspoon Lemon Zest Omit if unavailable; fresh zest is ideal.
  • 3 tablespoons Olive Oil Avocado oil can be substituted for a different flavor.
  • 1/2 teaspoon Kosher Salt Sea salt works as an excellent alternative.
  • 1/4 teaspoon Black Pepper Use freshly cracked for the best flavor.

Method
 

Preparation
  1. Chop the romaine lettuce into bite-sized pieces. Rinse under cold water, drain well, and pat dry thoroughly.
  2. In a large salad bowl, combine the chopped romaine, thinly sliced shallots, and parmesan cheese. Sprinkle in lemon zest if using.
  3. In a small jar, combine kosher salt, black pepper, lemon juice, and olive oil. Shake well to emulsify.
  4. Pour the dressing over the salad mixture and gently toss to coat evenly.
