Mint Syrup Preparation
- In a medium saucepan, combine filtered water, fresh mint leaves, and organic cane sugar. Bring to a boil over medium heat for about 2 minutes. Reduce heat and let it simmer for an additional 2-3 minutes until sugar dissolves and mint is fragrant. Remove from heat and let cool before straining out mint.
Juice Blending
- Once the mint syrup has cooled, add it to a high-powered blender with freshly squeezed lemon juice, cubed watermelon, and chopped cucumber. Blend on medium-high for 2-3 minutes until smooth and foamy.
Juice Straining
- Pour the blended mixture through a fine-mesh strainer into a large pitcher, pressing the pulp to maximize juice extraction. Adjust the pulp to preference.
Serving
- To serve, fill glasses with ice and pour the juice over it. Garnish with fresh mint leaves and watermelon chunks.
