Step-by-Step Instructions
  1. Make the Pesto: In a food processor, combine parsley, spinach, lemon juice, pine nuts, and garlic. Add salt and pepper, then blend until smooth. Gradually add olive oil until fully combined and creamy.
  2. Prepare Salad Mixture: In a large bowl, shred the rotisserie chicken. Add edamame and chickpeas. Chop cucumber into slices and mix all ingredients together.
  3. Combine Ingredients: Add the pesto to the chicken mixture. Gently fold in to coat all ingredients without over-mixing.
  4. Serve: Place arugula on plates, top with chicken mixture, and garnish with pine nuts. Serve immediately.
