Ingredients
  

For the Chicken
  • 1 lb Chicken Thighs can swap for chicken breasts
  • 2 tbsp Soy Sauce opt for reduced sodium if desired
  • 1 tbsp Rice Vinegar
  • 1 tbsp Cornstarch
For the Noodles
  • 8 oz Udon Noodles can substitute with ramen or other noodles
For the Sauce
  • 2 tbsp Oyster Sauce
  • 1 tbsp Toasted Sesame Oil
  • 2 cloves Garlic freshly minced
  • 1 tbsp Fresh Ginger minced or ground ginger as alternative
For the Vegetables
  • 2 tbsp Neutral Oil like Grapeseed or Canola
  • 1 medium Yellow Onion sliced vertically
  • 1 medium Carrot julienned
  • 2 cups Bok Choy sliced into segments
  • 2 scallions Scallions sliced into rounds
  • 1 optional Red/Green Chile Peppers for garnish

  • 2 tbsp Toasted Sesame Seeds
  • 1 optional Additional Scallions
  • 1 optional Cilantro
  • 2 wedges Lime for garnish

Method
 

Step-by-Step Instructions
  1. Marinate the chicken in a mixing bowl with soy sauce, rice vinegar, and cornstarch for at least 10 minutes.
  2. Cook udon noodles in boiling water according to package instructions (about 3-5 minutes). Drain and rinse with cold water and set aside.
  3. In a small bowl, whisk together remaining soy sauce, oyster sauce, sesame oil, garlic, and ginger for the sauce.
  4. Heat oil in a skillet over medium-high heat. Add marinated chicken and cook for 3-4 minutes until golden brown.
  5. Add onions and carrots to the skillet, cooking for 2-3 minutes until just softened.
  6. Stir in bok choy and scallion whites, cook another 2-3 minutes until bok choy is tender but crisp.
  7. Return the chicken to the skillet, add udon noodles and sauce, tossing everything gently for 1 minute on high heat.
  8. Taste and adjust seasoning as needed. Serve hot, garnished with optional toppings.
