- Marinate the chicken in a mixing bowl with soy sauce, rice vinegar, and cornstarch for at least 10 minutes.
- Cook udon noodles in boiling water according to package instructions (about 3-5 minutes). Drain and rinse with cold water and set aside.
- In a small bowl, whisk together remaining soy sauce, oyster sauce, sesame oil, garlic, and ginger for the sauce.
- Heat oil in a skillet over medium-high heat. Add marinated chicken and cook for 3-4 minutes until golden brown.
- Add onions and carrots to the skillet, cooking for 2-3 minutes until just softened.
- Stir in bok choy and scallion whites, cook another 2-3 minutes until bok choy is tender but crisp.
- Return the chicken to the skillet, add udon noodles and sauce, tossing everything gently for 1 minute on high heat.
- Taste and adjust seasoning as needed. Serve hot, garnished with optional toppings.
