For the Skillet

  • 1 pound Lean Ground Beef Can substitute with ground turkey or chicken.
  • 1 tablespoon Chili Powder Adjust amount to taste.
  • 1 teaspoon Ground Cumin Can substitute with coriander.

  • 3 cloves Grated Garlic Use fresh garlic for best results.
  • 2 medium Sweet Potatoes Can substitute with butternut squash.
  • 1 can Fire Roasted Diced Tomatoes Or use plain diced tomatoes.
  • 1 can Canned Diced Green Chiles Or use fresh jalapeños for extra spice.
  • 1 cup Water Can replace with low-sodium broth.
For Topping
  • 1 cup Shredded Cheddar Cheese Monterey Jack or Pepper Jack are alternatives.
  • Cilantro Optional garnish.

Method
 

Cooking Instructions
  1. Heat the olive oil in a large skillet over medium-high heat for about 1 minute.
  2. Add the ground beef and diced onion, crumbling the beef as it cooks. Season with chili powder, cumin, salt, and pepper. Cook for 5-7 minutes until the beef is no longer pink.
  3. Stir in the grated garlic and cook for an additional minute. Transfer the mixture to a plate.
  4. In the same skillet, combine sweet potatoes, fire-roasted tomatoes, diced green chiles, and water. Season with chili powder, cumin, salt, and pepper. Stir to combine.
  5. Cover and let simmer for about 20 minutes until sweet potatoes are tender.
  6. Return the beef mixture to the skillet, stir to combine, and top with shredded cheese. Cover until the cheese is melted, about 2-3 minutes.
  7. Remove from heat and garnish with cilantro if desired. Serve warm.
