- Preheat your oven to 200°C (400°F).
- Roll out your thawed puff pastry on a lightly floured surface until it's about ¼ inch thick. Cut circles using a cake pan or round cutter and prick them with a fork.
- Place the pastry circles onto a baking tray lined with parchment paper. Cover with another baking tray or parchment and bake for 15-18 minutes, until golden brown.
- Let the pastry cool completely on a wire rack.
- Chill a bowl and whip the heavy cream until soft peaks form (about 3-5 minutes).
- Mix mascarpone cheese, powdered sugar, and vanilla extract until smooth. Fold in whipped cream.
- Assemble the cake by placing one pastry layer on a serving plate, adding half of the cream filling, berry jam, and fresh berries. Top with a second layer and decorate.
- Scatter fresh berries on top and dust with powdered sugar before serving.
