Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place medium-sized sweet potatoes on the lined baking sheet and bake for 45–60 minutes, until fork-tender.
  3. In a skillet over medium heat, cook the ground turkey, breaking it apart with a spatula, for 5–7 minutes until browned.
  4. Stir in the rinsed and drained black beans and cook for another 2–3 minutes until heated through.
  5. Remove the sweet potatoes from the oven, slice them down the middle, and fluff the insides with a fork.
  6. Spoon the turkey and black bean mixture into each sweet potato.
  7. Sprinkle cheese over the stuffed sweet potatoes and return to the oven for 5–10 minutes until melted.
  8. Let cool slightly and top with avocado, sour cream, or sliced green onions before serving.
