- Pat the chuck roast dry with paper towels and season with salt and black pepper.
- In a large skillet, heat olive oil over medium-high heat and sear the roast for 2-3 minutes on each side.
- Layer sliced onions, carrots, and quartered potatoes at the bottom of the slow cooker.
- Sprinkle minced garlic, thyme, and a bay leaf over the vegetables.
- Carefully transfer the seared roast on top of the vegetables.
- In a bowl, whisk together beef broth and Worcestershire sauce, then pour around the roast.
- Cover and cook on LOW for 8 hours or HIGH for 4-5 hours.
- Once done, remove the bay leaf and let the roast rest for 10 minutes before serving.
