Step-by-Step Instructions
  1. Pat the chuck roast dry with paper towels and season with salt and black pepper.
  2. In a large skillet, heat olive oil over medium-high heat and sear the roast for 2-3 minutes on each side.
  3. Layer sliced onions, carrots, and quartered potatoes at the bottom of the slow cooker.
  4. Sprinkle minced garlic, thyme, and a bay leaf over the vegetables.
  5. Carefully transfer the seared roast on top of the vegetables.
  6. In a bowl, whisk together beef broth and Worcestershire sauce, then pour around the roast.
  7. Cover and cook on LOW for 8 hours or HIGH for 4-5 hours.
  8. Once done, remove the bay leaf and let the roast rest for 10 minutes before serving.
