- Boil the Pasta: Bring a large pot of salted water to a boil. Cook spaghetti according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup pasta water, then drain spaghetti.
- Prepare the Breadcrumbs: In a skillet, heat 2 tablespoons of olive oil over medium heat. Toss in breadcrumbs and cook for 3-5 minutes until golden brown. Season with salt and pepper, then set aside.
- Sauté Garlic and Red Pepper Flakes: In the same skillet, add remaining olive oil. Sauté garlic and red pepper flakes for 2-3 minutes until garlic is golden. Do not burn.
- Combine Pasta and Sauce: Add drained spaghetti to the skillet. Sprinkle with ¾ cup Parmesan and pour in reserved pasta water. Stir until cheese melts and pasta is coated. Add more water for consistency if needed.
- Serve and Garnish: Transfer spaghetti to plates. Top with crispy breadcrumbs and remaining Parmesan. Garnish with parsley and serve immediately.
