Step-by-Step Instructions for Peach Pie Enchiladas
- Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or cooking spray.
- Microwave the flour tortillas for about 10 seconds until soft and pliable.
- Spread peach pie filling down the center of each tortilla, sprinkle with cinnamon, and roll tightly. Place seam-side down in the baking dish.
- In a saucepan, mix ¼ cup of water with leftover peach pie filling. Add butter and granulated sugar, and heat until it boils.
- Pour the sauce evenly over the enchiladas, then sprinkle with remaining sugar and cinnamon. Bake for about 25 minutes until golden brown.
- Turn on the broiler for the last 1-2 minutes for extra crispiness.
