- In a large mixing bowl, combine the rolled oats, chocolate chips, nut butter, and honey or maple syrup. Stir the mixture gently with a spatula until well incorporated, forming a sticky dough-like consistency.
- Using a tablespoon, scoop out portions of the cookie mixture and drop them onto a baking sheet lined with parchment paper. Flatten each scoop slightly with the back of the spoon or your fingers.
- Place the baking sheet with formed cookies into the refrigerator and chill for at least 30 minutes.
- After chilling, remove the cookies from the fridge and serve immediately or let sit out for a few minutes.
