Step-by-Step Instructions
  1. Gather and prepare your ingredients: Grate the Parmesan, mince garlic, dice shallot, and chop sun-dried tomatoes and fresh basil.
  2. In a large pot, heat the unsalted butter over medium-low heat. Add minced garlic and diced shallot, sauté for about 3 minutes until fragrant.
  3. Stir in black pepper, chili flakes, dried thyme, and tomato paste. Cook for 2 minutes until spices bloom.
  4. Add cheese tortellini and vegetable broth to the pot. Bring to a boil, then reduce to a simmer. Cook for about 3 minutes until the tortellini is tender.
