Ingredients
  

Soup Base
  • 1 pound ground beef or ground turkey, chicken, or Italian sausage
  • 1 can (14.5 ounces) diced tomatoes canned; substitute fresh tomatoes if desired
  • 1 can (15 ounces) tomato sauce/puree or tomato paste plus extra water for consistency
  • 4 cups chicken broth or beef/vegetable broth
  • 1 onion diced
  • 3 cloves garlic minced
Pasta
  • 8 ounces bowtie pasta any short pasta works; cook until slightly under al dente
Cheesy Goodness
  • 1 cup ricotta cheese or cottage cheese/cream cheese (use half the amount)
  • 1 cup mozzarella cheese shredded
  • 1/2 cup Parmesan cheese grated
Seasoning
  • 1 tablespoon Italian seasoning adjust to taste
  • to taste sea salt
  • to taste black pepper
Garnish
  • 1/4 cup fresh parsley chopped; substitute with dried parsley or fresh basil if desired

Method
 

Instructions
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Once shimmering, add ground beef, diced onion, and minced garlic. Cook for about 5-7 minutes, stirring frequently, until browned and translucent.
  2. Carefully drain excess fat from the pot. Stir in diced tomatoes, tomato sauce, and chicken broth. Add Italian seasoning along with sea salt and black pepper. Let simmer.
  3. Once simmering, stir in uncooked bowtie pasta. Increase heat to bring soup back to a boil. Reduce heat to low and simmer uncovered for 10-15 minutes or until pasta is cooked slightly under al dente.
  4. Remove pot from heat, stir in ricotta, mozzarella, and Parmesan cheese until well incorporated.
  5. Ladle soup into bowls and garnish with freshly chopped parsley.

Notes

Store leftovers in an airtight container for up to 4 days. Freeze the soup before adding pasta for up to 3 months. Thaw in the fridge overnight before reheating.
