  • 1 cup Broccoli or substitute with green beans/snap peas
  • 1 medium Zucchini or summer squash/bell peppers
  • 1 medium Bell Pepper any color or cherry tomatoes
For the Sauce
  • 1 cup Chicken Stock or vegetable stock for vegetarian option
  • 1 teaspoon Red Chili Pepper Flakes optional garnish
  • 2 tablespoons Fresh Parsley or cilantro as an alternative

Step-by-Step Instructions
  1. Begin by cutting the chicken breast into ½-inch cubes. In a mixing bowl, combine the chicken with a drizzle of olive oil, salt, pepper, and Cajun seasoning, tossing well to coat.
  2. Heat a large skillet over medium heat and add the seasoned chicken. Sauté for 5-7 minutes, stirring occasionally until the chicken is browned and cooked through, reaching an internal temperature of 165°F. Once done, remove the chicken from the skillet and set it aside on a plate.
  3. In the same skillet, add a touch more olive oil if needed and toss in the diced onion. Stir-fry the onion for about 2 minutes, until it becomes translucent and aromatic. Next, add the broccoli, zucchini, and bell pepper, seasoning them with additional Cajun seasoning. Cook the vegetables for 4-5 minutes until crisp-tender.
  4. To create a delicious sauce, deglaze the pan by pouring in the chicken stock, scraping up any browned bits from the bottom. Return the cooked chicken to the skillet, mixing everything thoroughly for about 2 minutes until heated through.
