- In a large soup pot, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium heat. Once the butter melts, add chopped onion, chopped celery, and sliced carrots. Sauté for 7-10 minutes until softened and translucent.
- Stir in 4 cups of broth and the 28 oz can of crushed tomatoes. Add chopped zucchini and chopped green beans, along with drained red kidney and cannellini beans and ½ teaspoon of Italian seasoning. Bring to a gentle boil.
- Once boiling, reduce heat to low, partially cover, and simmer for 10 minutes.
- Stir in ¾ cup of uncooked elbow macaroni. Simmer uncovered for another 15-20 minutes, stirring gently.
- Season with salt and pepper to taste, stir in fresh basil, and top with grated parmesan cheese if desired.
