Step-by-Step Instructions for Juicy Whole Roasted Chicken with Citrus Infusion
  1. Preheat your oven to 250°F (121°C). Make sure the oven rack is in the center position for even heat distribution.
  2. In a mixing bowl, combine all seasoning ingredients and stir until evenly blended.
  3. Rinse the chicken under cold water and pat dry with paper towels. Place the chicken breast-side up in a roasting pan.
  4. Rub the room temperature butter generously over the entire surface of the chicken.
  5. Sprinkle the seasoning mix evenly over the chicken, pressing it into the meat and skin.
  6. Optional: Quarter a lemon and stuff it inside the cavity of the chicken for added flavor.
  7. Place the roasting pan in the oven and roast for approximately 5 hours, monitoring the internal temperature.
  8. Every hour, turn the roasting pan for even cooking and begin basting the chicken with its own juices after 2 hours.
  9. Once the chicken reaches 160°F (71°C), remove from the oven and rest for at least 15 minutes before carving.
