Step‑by‑Step Instructions for Easy Strawberry Cake
- Preheat your oven to 200°C (390°F). Grease a 23 cm (9”) cake pan with butter or oil and line the bottom with baking paper.
- Wash and dice approximately 1 lb (500g) of strawberries into 1.5 cm pieces for the cake batter. Halve remaining strawberries for topping.
- In a large bowl, whisk together the sugar, oil, eggs, lemon zest, lemon juice, yogurt, and vanilla extract until smooth.
- In another bowl, whisk together all-purpose flour, baking powder, and salt. Gradually add to the wet mixture, stirring until smooth.
- Pour half of the batter into the prepared pan and sprinkle the diced strawberries on top. Pour remaining batter and top with halved strawberries.
- Bake for about 50 minutes, until golden brown and a skewer comes out clean. Cover with foil if browning too quickly.
