  • 125 grams Margarine or substitute with butter
  • 100 grams Light Brown Sugar
  • 100 grams Caster Sugar
  • 1 teaspoon Vanilla Extract
  • 1 large Egg consider vegan alternatives if needed
  • 250 grams Plain Flour
  • 1 teaspoon Bicarbonate of Soda
For the Mix-Ins
  • 150 grams Mini M&M’s reserve 80g for topping
  • 100 grams Chocolate Chips adjust according to preference

Method
 

Step-by-Step Instructions
  1. Cream the margarine and sugars until smooth and fluffy.
  2. Add vanilla extract and egg, mixing until fully incorporated.
  3. Sift in the flour and bicarbonate of soda, folding until just combined.
  4. Fold in the remaining M&M’s and chocolate chips evenly.
  5. Chill the dough covered for 30 minutes in the refrigerator.
  6. Preheat oven to 200°C (180°C fan) and line baking trays.
  7. Shape the dough into balls on the trays, pressing reserved M&M's on top.
  8. Bake for 8-10 minutes until edges are golden brown.
  9. Allow to cool on trays for 30 minutes before transferring to wire rack.
