  • 8 pieces Corn Tortillas Brush with oil for extra crispiness.
  • 2 cups Rotisserie Chicken Heat with taco seasoning for flavor.
For the Toppings
  • 1 cup Salsa Serve on the side.
  • 2 tablespoons Taco Seasoning Store-bought or homemade.
  • 1 cup Corn Canned or frozen.
  • 1 can Black Beans Rinse and drain.
  • 1 cup Cheese Cheddar or Monterey Jack, or dairy-free.
For Fresh Garnishes
  • Fresh Toppings Cilantro, diced tomatoes, avocado, or any veggies.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C).
  2. Brush both sides of each corn tortilla with canola oil. Place them on a baking sheet and bake for 10 minutes, flipping halfway through.
  3. In a medium saucepan, combine shredded rotisserie chicken, salsa, and taco seasoning. Stir in corn and black beans, warming for about 5 minutes.
  4. Remove the crispy tortillas from the oven. Top with about ½ cup of the warm chicken mixture and sprinkle ¼ cup of cheese over each.
  5. Return the assembled tostadas back to the oven and bake for an additional 5 minutes until the cheese is melted.
  6. Garnish with fresh cilantro leaves and diced tomatoes. Serve with lime wedges and additional salsa.
