  • 1 sheet Puff Pastry Keep cold for best results.
  • 1 large Egg For egg wash.
For the Filling
  • 2 cups Fresh Spinach Can substitute with thawed frozen spinach.
  • 1 cup Feta Cheese Can substitute with ricotta or mozzarella.
  • 1 tablespoon Olive Oil For sautéing spinach.

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat olive oil over medium heat. Add spinach and sauté for 3-4 minutes until wilted. Let cool and squeeze out excess moisture.
  2. Unroll puff pastry on a floured surface, roll out to ¼ inch thick. If warm, refrigerate for 10 minutes.
  3. Combine cooled spinach with crumbled feta, spread evenly on puff pastry leaving a small border.
  4. Slice the pastry into 1-inch strips, twist each strip several times and place on a parchment-lined baking sheet.
  5. Beat the egg for egg wash, brush tops of pastries for a golden finish.
  6. Preheat oven to 400°F (200°C). Bake for 15-20 minutes until puffed and golden.
