- In a large skillet, heat olive oil over medium heat. Add spinach and sauté for 3-4 minutes until wilted. Let cool and squeeze out excess moisture.
- Unroll puff pastry on a floured surface, roll out to ¼ inch thick. If warm, refrigerate for 10 minutes.
- Combine cooled spinach with crumbled feta, spread evenly on puff pastry leaving a small border.
- Slice the pastry into 1-inch strips, twist each strip several times and place on a parchment-lined baking sheet.
- Beat the egg for egg wash, brush tops of pastries for a golden finish.
- Preheat oven to 400°F (200°C). Bake for 15-20 minutes until puffed and golden.
