  • 2 tablespoons Olive Oil Can substitute with high-heat oil.
  • 1 teaspoon Oregano Fresh or dried.
  • 1 teaspoon Cumin
  • 1 cup Fresh Leafy Greens Spinach or kale.
  • 1 tablespoon Lemon Juice Freshly squeezed; vinegar can be a substitute.
Optional Toppings
  • 1/2 cup Feta Cheese Crumbled; goat cheese can be used as a twist.
  • 2 tablespoons Tahini Sauce For a nutty touch.

Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat for about 1-2 minutes until shimmering.
  2. Add 1 diced onion and 2 minced garlic cloves, stirring frequently for about 3-4 minutes until fragrant and translucent.
  3. Incorporate 1 pound of ground beef, breaking it apart. Cook for 5-7 minutes until browned.
  4. Stir in 2-3 chopped bell peppers, cooking for 4-5 minutes until they soften slightly.
  5. Sprinkle in 1 teaspoon of oregano, 1 teaspoon of cumin, and 1 tablespoon of lemon juice. Mix for 1-2 minutes.
  6. Add a handful of fresh leafy greens and stir continuously for 2-3 minutes until wilted.
  7. Remove from heat and serve, topping with feta cheese or tahini sauce.
