Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet, heat olive oil over medium heat, add spinach, and sauté for 3–4 minutes until wilted.
  3. Combine sautéed spinach, ricotta, Parmesan, garlic powder, salt, and pepper in a bowl and mix well.
  4. Cut puff pastry into 4-6 squares each, ensuring it stays cool.
  5. Place 1-2 tablespoons of the filling on each pastry square and fold to seal.
  6. Brush the tops with beaten egg for a golden finish.
  7. Bake for 20–25 minutes or until golden brown and puffed.
  8. Cool for 5 minutes before serving with tzatziki or marinara.
