Method

Step-by-Step Instructions
  1. In a mixing bowl, whisk together honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper until well combined. Coat each chicken thigh thoroughly in this flavorful marinade.
  2. Peel and chop your russet potatoes into even-sized chunks. Place them in a large pot of salted water, bringing it to a boil over medium-high heat. Cook the potatoes for about 15-20 minutes, or until fork-tender. Drain the potatoes and set aside.
  3. Return the drained potatoes to the pot on low heat. Add milk, unsalted butter, and smoked gouda cheese, stirring gently until melted and creamy. Mash until smooth and season with additional salt and black pepper to taste.
  4. Preheat your oven to 400°F (200°C). Arrange the marinated chicken thighs skin-side up in a greased baking dish. Bake for 25-30 minutes or until the chicken skin is crispy and the internal temperature reaches 165°F (75°C).
  5. Once cooked, remove from the oven and let the chicken rest for a few minutes. Serve the glazed chicken alongside the creamy gouda mashed potatoes.
