- Preheat your oven to 400°F (200°C).
- Pat the chicken thighs dry with paper towels and season with salt and pepper.
- Add olive oil to the skillet and heat over medium-high until shimmering.
- Sear the chicken thighs skin-side down for 5-7 minutes.
- Flip the chicken and cook for an additional 2 minutes before removing from skillet.
- Saute minced garlic for 30 seconds until fragrant.
- Pour in maple syrup, soy sauce, Dijon mustard, and apple cider vinegar. Stir and simmer.
- Return chicken thighs skin-side up to the skillet and spoon some glaze over them.
- Roast chicken in the oven for 15-18 minutes until the internal temperature reaches 175°F.
- Remove from oven, baste with glaze, and let rest for 5 minutes.
- Sprinkle fresh parsley over the chicken before serving.
