Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels and season with salt and pepper.
  3. Add olive oil to the skillet and heat over medium-high until shimmering.
  4. Sear the chicken thighs skin-side down for 5-7 minutes.
  5. Flip the chicken and cook for an additional 2 minutes before removing from skillet.
  6. Saute minced garlic for 30 seconds until fragrant.
  7. Pour in maple syrup, soy sauce, Dijon mustard, and apple cider vinegar. Stir and simmer.
  8. Return chicken thighs skin-side up to the skillet and spoon some glaze over them.
  9. Roast chicken in the oven for 15-18 minutes until the internal temperature reaches 175°F.
  10. Remove from oven, baste with glaze, and let rest for 5 minutes.
  11. Sprinkle fresh parsley over the chicken before serving.
