Cake Preparation
- Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing it and lining the bottom with parchment paper.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add eggs, sunflower oil, sour cream, and vanilla extract to dry ingredients; mix until just combined.
- Gradually pour in hot water, mixing gently until smooth; batter will be thin.
- Pour batter into prepared pan and bake for 20-25 minutes until a toothpick comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Ganache and Glaze Preparation
- Heat heavy cream and corn syrup until simmering; pour over dark chocolate and stir until smooth.
- Whip heavy cream until soft peaks form; fold into ganache to create a decadent filling.
- For the glaze, heat cream, pour over semisweet chocolate, let sit, then stir until smooth.
Assembly
- Spread half of the ganache over the cooled cake and chill for at least 2 hours.
- Once chilled, pour glaze over the cake, allowing it to cascade down the sides.
- Chill the decorated cake for 30 minutes, then dust with cocoa powder before serving.
- Slice into generous pieces and serve with vanilla ice cream or fresh berries.
