Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and lightly grease a standard loaf pan with butter or non-stick spray.
  2. In a mixing bowl, whisk together 2 cups of all-purpose flour, 1 cup of sugar, and 2 teaspoons of baking powder until well combined.
  3. In a separate bowl, mix 3 large eggs, ½ cup of extra virgin olive oil, and the zest of one lemon until well blended.
  4. Fold in 1 ½ cups of diced rhubarb gently into the wet mixture.
  5. Pour the wet mixture into the well of the dry ingredients and gently combine until just blended.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes until golden brown.
  7. Allow the loaf to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.

Notes
