- Preheat your oven to 350°F (175°C) and lightly grease a standard loaf pan with butter or non-stick spray.
- In a mixing bowl, whisk together 2 cups of all-purpose flour, 1 cup of sugar, and 2 teaspoons of baking powder until well combined.
- In a separate bowl, mix 3 large eggs, ½ cup of extra virgin olive oil, and the zest of one lemon until well blended.
- Fold in 1 ½ cups of diced rhubarb gently into the wet mixture.
- Pour the wet mixture into the well of the dry ingredients and gently combine until just blended.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes until golden brown.
- Allow the loaf to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
