- Divide the filling evenly among the chicken thighs, folding the sides over to encase the filling.
- Secure the stuffed thighs with toothpicks or kitchen twine and place them skin-side up on the baking sheet.
- Drizzle olive oil over each thigh and rub it evenly across the skin.
- Bake in the preheated oven for 25 to 30 minutes until the skin is golden brown and a thermometer reads 75°C (165°F).
