Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine softened cream cheese, fresh spinach, grated Parmesan, minced garlic, chopped parsley, dried oregano, paprika, and half of your salt and pepper. Mix thoroughly.
  3. Pat the chicken thighs dry with paper towels and season the inner side with the remaining salt and pepper.
  4. Divide the filling evenly among the chicken thighs, folding the sides over to encase the filling.
  5. Secure the stuffed thighs with toothpicks or kitchen twine and place them skin-side up on the baking sheet.
  6. Drizzle olive oil over each thigh and rub it evenly across the skin.
  7. Bake in the preheated oven for 25 to 30 minutes until the skin is golden brown and a thermometer reads 75°C (165°F).
  8. Let the thighs rest for about 5 minutes before serving.
