Ingredients
  

For the Meatballs
  • 1 lb Ground Chicken or ground turkey
  • 1 cup Panko Breadcrumbs or regular breadcrumbs
  • 1/4 cup Milk any non-dairy milk works
  • 1 large Egg or flax egg for vegan
  • 1/2 cup Celery finely chopped; green bell pepper can substitute
  • 2 cloves Garlic Cloves or garlic powder
  • 1/4 cup Green Onions or chives
  • 1/2 cup Frank’s RedHot Sauce or any hot sauce
  • 1 tbsp Worcestershire Sauce or soy sauce
  • 1 tsp Onion Powder optional
  • 1 tsp Garlic Powder or extra fresh garlic
  • 1 tbsp Dried Parsley or fresh parsley
  • 1 tsp Salt to taste
  • 1/2 tsp Black Pepper to taste
  • 2 tbsp Butter or margarine
For the Blue Cheese Sauce
  • 1/2 cup Sour Cream or Greek yogurt
  • 1/4 cup Mayonnaise or vegan mayo
  • 1/3 cup Crumbled Blue Cheese or feta cheese
  • 1 tbsp Lemon Juice or vinegar
  • 1 tsp Garlic Powder for sauce

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. Combine panko breadcrumbs with milk in a bowl and let sit for 5 minutes.
  3. Mix ground chicken, egg, celery, garlic, green onions, Frank's RedHot Sauce, Worcestershire sauce, onion powder, garlic powder, parsley, salt, and pepper with the breadcrumbs.
  4. Shape into 1.5-inch meatballs and place on the prepared baking sheet.
  5. Bake for 18-22 minutes until cooked through and golden brown.
  6. While baking, melt butter and mix with Frank’s RedHot Sauce and Worcestershire Sauce to make the glaze.
  7. For the blue cheese sauce, mix sour cream, mayonnaise, blue cheese, lemon juice, and garlic powder in a bowl.
  8. Once meatballs are done, toss in buffalo glaze and serve with blue cheese sauce.

Notes
