Method
 

Step-by-Step Instructions
  1. Slice fresh eggplants into ¼-inch rounds, sprinkle with salt, and let sit for 30 minutes. Rinse and pat dry.
  2. Set up a breading station with flour, beaten eggs, and breadcrumbs. Dredge each eggplant slice in flour, then dip in egg, and coat in breadcrumbs.
  3. Heat olive oil in a skillet over medium heat. Fry the eggplant slices for 3-4 minutes per side until golden brown. Drain on paper towels.
  4. Preheat the oven to 375°F. Layer a baking dish with marinara, fried eggplant, mozzarella, and parmesan. Repeat and finish with cheese on top.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden brown.
