- In a medium bowl, combine rolled oats, coconut milk, Greek yogurt, and shredded coconut. Stir until everything is well blended.
- Fold in the maple syrup, vanilla extract, ground cinnamon, and a pinch of salt until fully incorporated.
- If using, gently fold in the sliced bananas into the mixture to add creaminess.
- Spoon the creamy oat mixture evenly into two jars or airtight containers, packing it generously.
- Close the containers tightly and refrigerate for at least 4 hours, ideally overnight, allowing the oats to absorb the liquids.
- Before serving, stir the oats and top with whipped cream and a sprinkle of shredded coconut.
