Ingredients
  

For the Base
  • 1 lb Ground Beef can substitute with ground turkey or chicken
  • 3 cups Bell Peppers a mix of red, yellow, and green
  • 1 medium Onion yellow or white preferred
  • 2 cloves Garlic minced
  • 14.5 oz Diced Tomatoes fire-roasted for extra flavor
  • 8 oz Tomato Sauce store-bought or homemade
  • 1 cup White Rice uncooked long-grain
For Flavor and Moisture
  • 1 cup Beef Broth or chicken broth if using turkey
  • 2 tbsp Italian Seasoning
  • to taste Salt
  • to taste Pepper
For the Topping
  • 2 cups Cheese (Cheddar or Mozzarella) can mix for added flavor
  • 1 tbsp Olive Oil can substitute with vegetable oil

Method
 

Prep and Cook
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat, then add ground beef and chopped onion. Cook for 5-6 minutes until browned and onion is translucent.
  3. Add chopped bell peppers and minced garlic to the skillet and sauté for 2-3 minutes.
  4. Stir in diced tomatoes, tomato sauce, uncooked rice, beef broth, Italian seasoning, salt, and pepper. Mix thoroughly.
  5. Transfer the mixture to the prepared baking dish, cover with aluminum foil, and bake for 45-50 minutes.
  6. Remove from oven, uncover, and sprinkle cheese on top. Bake for an additional 10 minutes until cheese is melted.
  7. Let cool for 5 minutes before serving.
