- Preheat the oven to 350°F (175°C) and grease or line a 9x13 inch baking dish with parchment paper.
- In a large mixing bowl, combine chopped strawberries and rhubarb with granulated sugar, cornstarch, and lemon juice. Toss gently and let sit for about 10 minutes.
- In a separate bowl, whisk together the flour, oats, brown sugar, cinnamon, baking powder, and salt. Cut in the cold butter until it resembles coarse crumbs.
- Press about two-thirds of the crumb mixture into the prepared baking dish to form a base, then spread the fruit filling evenly on top.
- Sprinkle the remaining crumb mixture over the fruit filling and bake for 40 to 45 minutes until golden brown on top.
- Allow to cool completely in the pan for at least 1 hour, then slice into squares.
