Step-by-Step Instructions

  2. In a large mixing bowl, combine chopped strawberries and rhubarb with granulated sugar, cornstarch, and lemon juice. Toss gently and let sit for about 10 minutes.
  3. In a separate bowl, whisk together the flour, oats, brown sugar, cinnamon, baking powder, and salt. Cut in the cold butter until it resembles coarse crumbs.
  4. Press about two-thirds of the crumb mixture into the prepared baking dish to form a base, then spread the fruit filling evenly on top.
  5. Sprinkle the remaining crumb mixture over the fruit filling and bake for 40 to 45 minutes until golden brown on top.
  6. Allow to cool completely in the pan for at least 1 hour, then slice into squares.
