  • 1 cup Cool Whip Lightens the filling.

Method
 

Preparation
  1. In a large mixing bowl, whisk together eggs and granulated sugar until well combined and slightly frothy.
  2. Gradually stir in softened unsalted butter, sour cream, and mayonnaise.
  3. Add baking soda diluted in lemon juice.
  4. Gradually mix in baking powder and all-purpose flour until a soft dough forms.
  5. Cover bowl with plastic wrap and let the dough rest for about 30 minutes.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll the rested dough into teaspoon-sized balls and place them on the prepared baking sheets.
  8. Bake for 15 minutes or until the cookies are lightly golden.
  9. Remove cookies from the oven and cool slightly before hollowing out the centers.
  10. Beat together cream cheese and softened butter until creamy.
  11. Mix in dulce de leche and apricot jam.
  12. Gently fold in Cool Whip.
  13. Fill each hollowed cookie and press two halves together.
  14. Chill filled cookies in the refrigerator for at least 2 hours.
  15. Prepare decoration by mixing milk with food coloring.
  16. Dip cookies in colored milk mixture and roll in sugar.
  17. Return decorated cookies to the refrigerator until ready to serve.
