Step-by-Step Instructions

  2. Melt the soft caramel candies with milk or cream over low heat, stirring continuously.
  3. Combine the toasted coconut with the caramel mixture, ensuring all is coated well.
  4. Drop rounded mounds of the mixture onto a parchment-lined baking sheet and flatten them.
  5. Melt semi-sweet chocolate chips with coconut oil in the microwave until smooth.
  6. Dip the bottoms of the cookies in chocolate and drizzle on top before placing them back on parchment.
  7. Refrigerate for 15–20 minutes until the chocolate firms up.
