Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x9-inch baking dish.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, ketchup, garlic and onion powder, salt, and pepper. Mix gently until blended.
  3. Transfer the meat mixture to the greased baking dish, spreading it evenly to form a compact loaf shape. Bake uncovered for 20 to 25 minutes until firm and cooked through.
  4. While the meatloaf is baking, heat your mashed potatoes and stir in sour cream and butter, seasoning to taste.
  5. Once the meatloaf is done, spread the warm mashed potatoes over the top of it.
  6. Sprinkle shredded cheddar cheese generously over the mashed potatoes, then bake for an additional 10 to 15 minutes until the cheese is bubbly.
  7. Let the dish rest for 5 to 10 minutes, garnish with parsley, slice, and enjoy.
