  • 1 teaspoon fennel seeds lightly crushed, optional
  • 0.5 cup sun-dried tomatoes chopped, packed in oil
  • 2 tablespoons tomato paste
  • 1 cup vegetable broth or vegetable stock
  • 0.5 cup heavy cream or half-and-half
  • 0.5 cup Parmesan cheese grated
  • 1 tablespoon balsamic vinegar
For the Beans and Spinach
  • 2 cans butter beans drained and rinsed
  • 2 cups spinach fresh or frozen
For Finishing Touches
  • 1 lemon zest and juice fresh
  • 2 tablespoons extra virgin olive oil drizzle before serving

Step-by-Step Instructions
  1. Melt 2 tablespoons of butter over medium heat until foamy. Add 4 minced garlic cloves, ½ teaspoon red pepper flakes, and 1 teaspoon crushed fennel seeds. Sauté for about 30 seconds, or until fragrant.
  2. Stir in ½ cup of chopped sun-dried tomatoes and 2 tablespoons of tomato paste. Cook for 2-3 minutes until it thickens.
  3. Pour in 1 cup of vegetable broth and ½ cup of heavy cream, mixing well. Increase heat slightly and bring to a gentle simmer.
  4. Gently fold in 2 cans of butter beans and 1 teaspoon of Italian seasoning. Allow to simmer for 5 minutes.
  5. Mix in ½ cup of grated Parmesan cheese, 1 tablespoon of balsamic vinegar, and 2 cups of fresh spinach. Cook for 2 minutes until spinach wilts.
  6. Drizzle with extra virgin olive oil before serving.
