Baking Instructions
  1. Preheat your oven to 350°F (175°C). Prepare your loaf pan by greasing it or lining it with parchment paper.
  2. In a medium bowl, whisk together 1 ½ cups of all-purpose flour, 2 teaspoons of baking powder, and a pinch of salt.
  3. In a separate large bowl, blend together 1 cup of Greek yogurt, ¼ cup of freshly squeezed lemon juice, 2 tablespoons of lemon zest, and ⅓ cup of honey or maple syrup.
  4. Gradually add the dry mixture to the wet ingredients, gently folding them together.
  5. Pour the batter into your prepared loaf pan, smoothing the top.
  6. Bake for 45-50 minutes, checking for doneness at 45 minutes.
  7. Once baked, cool for about 10 minutes before transferring to a wire rack.
  8. Slice and serve as is, or add fresh berries and powdered sugar.
