Baking Instructions
- Preheat your oven to 350°F (175°C). Prepare your loaf pan by greasing it or lining it with parchment paper.
- In a medium bowl, whisk together 1 ½ cups of all-purpose flour, 2 teaspoons of baking powder, and a pinch of salt.
- In a separate large bowl, blend together 1 cup of Greek yogurt, ¼ cup of freshly squeezed lemon juice, 2 tablespoons of lemon zest, and ⅓ cup of honey or maple syrup.
- Gradually add the dry mixture to the wet ingredients, gently folding them together.
- Pour the batter into your prepared loaf pan, smoothing the top.
- Bake for 45-50 minutes, checking for doneness at 45 minutes.
- Once baked, cool for about 10 minutes before transferring to a wire rack.
- Slice and serve as is, or add fresh berries and powdered sugar.
