Method
 

Preparation
  1. Wash and peel the Granny Smith apples. Slice them into uniform wedges, about 1/2 inch thick. Pat the slices dry with a towel and toss them in a mixing bowl with the juice from 1/2 a lemon.
  2. In a separate bowl, combine brown sugar, ground cinnamon, allspice, and cornstarch. Whisk until uniform.
  3. Toss the sliced apples into the sugar mixture until evenly coated. Drizzle vanilla extract over the apples and mix.
  4. Transfer the coated apple slices into a baking dish and dot with butter.
  5. Cover with aluminum foil and bake in a preheated oven at 350°F (175°C) for 45-60 minutes, stirring every 15 minutes.
  6. While the apples cool, whip heavy cream until soft peaks form, then fold in ground cinnamon and sugar.
  7. Serve the baked apples topped with cinnamon whipped cream.
