Step-by-Step Instructions
  1. In a food processor, combine the ricotta, cream cheese, and vanilla bean paste. Blend for 30 seconds to 1 minute until fluffy and smooth. Transfer to a piping bag and set aside.
  2. Preheat your grill or broiler to medium heat. Slice the croissants in half and place them cut side up on a baking sheet. Toast for 2-3 minutes until golden brown.
  3. Arrange the toasted croissant halves on individual serving plates and pipe the whipped ricotta onto them.
