- Preheat your oven to 375°F (190°C) and prepare a large ceramic casserole dish with nonstick cooking spray.
- Spread 1 ½ cups of brown minute rice evenly across the bottom of the prepared dish, then layer with 5 cups of chopped broccoli florets, finely diced onions, and carrots. Top with 1 ½ cups of frozen green peas.
- In a medium saucepan, combine 2 cups of chicken broth and 1 ½ cups of 2% milk over medium heat until steaming. Stir in 1 ½ cups of shredded cheddar cheese, ¼ teaspoon of garlic powder, and 1/8 teaspoon of salt and pepper until smooth.
- Pour the creamy sauce over the layered ingredients and gently mix to combine.
- Cut 1 ½ pounds of chicken breast into bite-sized pieces and place them on top of the casserole.
- Bake uncovered in the preheated oven for about 30 minutes or until edges are bubbling.
- Sprinkle the remaining cheese on top and bake for an additional 15–20 minutes until golden and bubbling.
- Let the casserole cool for 10 minutes before serving.
