Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a large ceramic casserole dish with nonstick cooking spray.
  2. Spread 1 ½ cups of brown minute rice evenly across the bottom of the prepared dish, then layer with 5 cups of chopped broccoli florets, finely diced onions, and carrots. Top with 1 ½ cups of frozen green peas.
  3. In a medium saucepan, combine 2 cups of chicken broth and 1 ½ cups of 2% milk over medium heat until steaming. Stir in 1 ½ cups of shredded cheddar cheese, ¼ teaspoon of garlic powder, and 1/8 teaspoon of salt and pepper until smooth.
  4. Pour the creamy sauce over the layered ingredients and gently mix to combine.
  5. Cut 1 ½ pounds of chicken breast into bite-sized pieces and place them on top of the casserole.
  6. Bake uncovered in the preheated oven for about 30 minutes or until edges are bubbling.
  7. Sprinkle the remaining cheese on top and bake for an additional 15–20 minutes until golden and bubbling.
  8. Let the casserole cool for 10 minutes before serving.
