For the Crunch
  • 1/4 cup Walnuts raw
  • 1/4 cup Pine nuts raw
  • 1/2 cup Fresh basil
  • 2 cloves Garlic fresh
  • 1/2 cup Parmesan cheese freshly grated
For Seasoning
  • to taste Salt
  • to taste Pepper
For Added Sweetness
  • 1 cup Peas thawed frozen
For Binding
  • 1/4 cup Olive oil

Method
 

Step-by-Step Instructions
  1. Prepare the Pasta: Bring two large pots of salted water to boil. Cook fusilli for 10-12 minutes and bow-tie pasta for the same. Drain and cool.
  2. Make the Pesto Sauce: Blend pesto, drained spinach, lemon juice, and mayonnaise in a food processor until smooth and creamy.
  3. Combine the Ingredients: Pour pesto sauce over cooled pasta in a bowl. Fold in Parmesan cheese, peas, and pine nuts. Season with salt and pepper.
  4. Mix Thoroughly: Stir salad gently to combine everything. Taste and adjust seasoning.
  5. Chill or Serve: Cover and chill for at least 20 minutes before serving or serve immediately.
