  • 2 cups Cooked White or Brown Rice Can be replaced with cauliflower rice or quinoa.
  • 1 medium Avocado
  • 1 cup Cherry Tomatoes
  • 1 cup Corn Kernels
  • 1/2 medium Red Onion
  • 1/4 cup Fresh Cilantro
Optional Toppings
  • 1/2 cup Greek Yogurt or Sour Cream
  • 1 teaspoon Chili Flakes

Step‑by‑Step Instructions
  1. Prepare the Marinade: In a medium bowl, whisk together honey, fresh lime juice, lime zest, minced garlic, soy sauce, olive oil, salt, and black pepper until well combined.
  2. Marinate the Chicken: Add the chicken breasts to the bowl with the marinade, ensuring they are fully coated. Let them rest for 10-15 minutes at room temperature.
  3. Cook the Chicken: Heat a large skillet over medium heat and add a drizzle of olive oil. Once hot, place the marinated chicken in the skillet and cook for 5-7 minutes per side.
  4. Slice the Chicken: Transfer the cooked chicken to a cutting board and let it rest for about 5 minutes. Slice into strips.
  5. Assemble the Rice Bowl: Prepare four serving bowls and add warm cooked rice as the base.
  6. Top with Chicken and Veggies: Arrange the sliced chicken, avocado, cherry tomatoes, corn, and red onion over the rice.
