  • ¼ cup Red Onion finely sliced
  • 3 tablespoons Fresh Cilantro chopped
  • ½ cup Greek Yogurt or Sour Cream optional
  • ½ teaspoon Chili Flakes optional for heat

Method
 

Preparation Steps
  1. In a medium bowl, whisk together honey, lime juice, lime zest, and minced garlic.
  2. Add soy sauce, olive oil, salt, and black pepper; mix until smooth.
  3. Place chicken breasts in a dish and pour marinade over them, covering evenly.
  4. Marinate at room temperature for 10 to 15 minutes.
  5. Heat a skillet, add olive oil, and cook marinated chicken for 5 to 7 minutes on each side.
  6. Transfer chicken to a cutting board and rest for about 5 minutes before slicing.
  7. Prepare rice bowls by spooning warm rice as the base.
  8. Layer sliced chicken over rice, then add avocado, cherry tomatoes, and corn.
  9. Top with red onion and cilantro, and offer yogurt or sour cream and chili flakes on the side.
