Preparation and Cooking Steps
- Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- Toss diced sweet potatoes with olive oil, salt, black pepper, smoked paprika, and dried thyme. Spread on baking sheet and roast for 20 minutes.
- Heat remaining olive oil in a skillet, add sausage and cook for 5-7 minutes until browned. Set aside.
- In the same skillet, sauté minced garlic for 30 seconds. Stir in honey, soy sauce, and apple cider vinegar, simmer for 2-3 minutes.
- Combine roasted sweet potatoes and sausage in the skillet, toss with glaze, and cook for an additional 2 minutes.
- Serve warm, garnished with parsley if desired.
