  • 2 cups Sweet potatoes Peeled and diced into ½-inch cubes.
  • 2 Tbsp Olive oil Can be replaced with vegetable oil if preferred.
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Black pepper Adjust to taste.
  • 1 tsp Smoked paprika Regular paprika may work.
  • 1 tsp Dried thyme Fresh thyme can elevate the dish.
For the Glaze
  • 3 cloves Garlic Minced.
  • ¼ cup Honey Or maple syrup as an alternative.
  • 2 Tbsp Soy sauce Use gluten-free if needed.
  • 1 Tbsp Apple cider vinegar Can substitute with white vinegar.
  • 2 Tbsp Fresh parsley Optional for garnish.

Method
 

Preparation and Cooking Steps
  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Toss diced sweet potatoes with olive oil, salt, black pepper, smoked paprika, and dried thyme. Spread on baking sheet and roast for 20 minutes.
  3. Heat remaining olive oil in a skillet, add sausage and cook for 5-7 minutes until browned. Set aside.
  4. In the same skillet, sauté minced garlic for 30 seconds. Stir in honey, soy sauce, and apple cider vinegar, simmer for 2-3 minutes.
  5. Combine roasted sweet potatoes and sausage in the skillet, toss with glaze, and cook for an additional 2 minutes.
  6. Serve warm, garnished with parsley if desired.
