- In a large bowl, combine the chicken thighs with vegetable oil, parmesan cheese, lemon juice, honey, soy sauce, Dijon mustard, minced garlic, smoked paprika, crushed red pepper, oregano, kosher salt, and black pepper. Mix well until the chicken is thoroughly coated in the marinade. Cover and refrigerate for at least 1 hour.
- After marinating, take your soaked wooden skewers and thread 5-6 pieces of chicken onto each skewer, leaving space between pieces. Place them in a single layer in your air fryer basket.
- Preheat your air fryer to 400°F. Once preheated, place the skewers in the basket and air fry for 11-12 minutes, flipping halfway through for even cooking.
- While the chicken cooks, melt unsalted butter in a skillet over medium heat. Add minced garlic and sauté for about 1 minute. Remove from heat and stir in honey, parmesan cheese, and parsley to create a glaze.
- Once the skewers are golden-brown, brush them with the honey garlic butter mixture and serve warm.
