- Start by washing and chopping 4 medium ripe peaches, discarding the pits while keeping the skin on. Set aside.
- In a medium saucepan, combine the chopped peaches with 2 cups of water and about ½ cup of sugar. Bring to a boil, then reduce heat and simmer for 5-7 minutes.
- Remove from heat and allow the mixture to cool at room temperature for 10 minutes. Chill in the refrigerator for 30 minutes.
- Strain the mixture over a large bowl or pitcher using a fine mesh sieve, pressing to extract as much liquid as possible.
- In the bowl or pitcher, add the remaining 2 cups of cold water and 1 cup of freshly squeezed lemon juice. Stir well to combine.
- To serve, fill glasses with ice and pour the lemonade over. Garnish with mint and slices of peach.
