- Begin by washing and chopping approximately four medium ripe peaches. Remove the pits but leave the skins on for added flavor and nutrition. Place the chopped peaches into a medium bowl.
- In a medium saucepan, combine the chopped peaches with 2 cups of cold water and ½ cup of sugar. Place the saucepan over medium heat and bring the mixture to a gentle boil. Stir occasionally.
- Once boiling, reduce the heat to low and let it simmer for 5-7 minutes, allowing the peaches to soften until they become mushy and fragrant.
- After simmering, remove the saucepan from the heat and let the mixture cool at room temperature for about 10 minutes.
- Once the peach mixture is chilled, take a fine mesh sieve and place it over a large bowl or pitcher. Pour the peach mixture through the sieve to extract all the sweet juices.
- To your strained peach juice, add the remaining 2 cups of cold water along with 1 cup of freshly squeezed lemon juice. Stir well to combine and serve over ice.
