Method
 

Step-by-Step Instructions
  1. Wash and chop 4 medium ripe peaches, discarding the pits while keeping the skin on.
  2. Combine chopped peaches with 2 cups of water and ½ cup of sugar in a saucepan. Bring to a boil over medium heat, stirring until sugar dissolves.
  3. Reduce heat and let simmer for 5-7 minutes until peaches are soft.
  4. Remove from heat and allow to cool for about 10 minutes, then refrigerate for 30 minutes.
  5. Strain the peach mixture over a bowl or pitcher using a fine mesh sieve.
  6. In the bowl or pitcher, add remaining 2 cups of cold water and 1 cup of lemon juice. Stir well to combine.
  7. Serve over ice and garnish with fresh mint and peach slices.
