- Preheat your oven to 375°F (190°C) and prepare your baking dish.
- In a skillet, heat olive oil and sauté onion and garlic for about 5 minutes until soft.
- In a bowl, mix ricotta cheese, egg, sautéed onion and garlic, spinach, half mozzarella, half Parmesan, and seasonings.
- Spread a thin layer of marinara sauce at the bottom of the baking dish.
- Layer lasagna noodles, then the ricotta-spinach mixture, followed by marinara sauce. Repeat layers until ingredients are used.
- Top final layer with remaining marinara sauce and cheeses, cover with foil, and bake for 25 minutes.
- Remove foil and bake for an additional 20-25 minutes until golden and bubbling.
- Allow to rest for 15 minutes before serving, optionally garnished with parsley.
