Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare your baking dish.
  2. In a skillet, heat olive oil and sauté onion and garlic for about 5 minutes until soft.
  3. In a bowl, mix ricotta cheese, egg, sautéed onion and garlic, spinach, half mozzarella, half Parmesan, and seasonings.
  4. Spread a thin layer of marinara sauce at the bottom of the baking dish.
  5. Layer lasagna noodles, then the ricotta-spinach mixture, followed by marinara sauce. Repeat layers until ingredients are used.
  6. Top final layer with remaining marinara sauce and cheeses, cover with foil, and bake for 25 minutes.
  7. Remove foil and bake for an additional 20-25 minutes until golden and bubbling.
  8. Allow to rest for 15 minutes before serving, optionally garnished with parsley.
